The Beef Basis folks have an increasingly valuable database with over 10 years of auction sale results for most of the beef auction houses in the US. One of their really handy forecasting tools is called the Expected Net Selling Prices Calculator. You input data about the cows you are planning to sell, the auction house and the date you want to sell them. It then calculates what the most likely price will be. Not perfect but a lot better than rolling dice. And there are four other tools like that for forecasting gain, etc.
